If you have got your information from the James Taylor book, then as has often been the case with his works, the information is simply wrong.
(i) The circular instrument were introduced on the 3500S Auto designed for the North American market which was built between 1969 and maybe as late as 1971, so they were not introduced in 1971 but 2 years earlier;(ii) The teardrop head restraints were introduced also for the 3500S Auto, so they were not intriduced in 1972;(iii) Leather did nit replace Ambla in 1972. The correct information is that the Ambla box pleated seats were introduced also on the 3500S Auto as standard fitment, although youy could pay extra top have the original design of leather seats.(iv) So far as cars other than the 3500S Auto, when the 3500S Manual was introduced in late 1971 it was fitted with teh box pleat Ambla seats as per the 3500S Auto, but again with the option of leather seats;(v) From late 1973 onwards, at the time that the 2200 was introduced, both the Ambla box pleat seats and the original design leather seats were replaced by a choice of leather box pleat seats or nylon box pleat seats (both with thinner squabs than the original seat design (and to my mind inferior)).(vi) I can't speak about the mph/kph speedo issue in New Zealand in 1972, but I am fairly sure that NZ and Australia had converted to metric before then, but in the period when the 3500S Auto was on sale, both the US and Canada were still using miles.

.I have seen box pleated leather  seats on a 73 car here in new Zealand
the condition of the engine bay is more than likely with over 100K
miles certainly not a car with only 3000 . The speedos on our cars were 
dual marked Miles/ Kilometres and our 72  had  a Km odometer. These date 
from the James Taylor book and may vary on an American .
